Bún Bò Huế (aka) Pho’s Sexy A$$ Cousin………. Quick and simple recipe using beef short ribs. Everyone has their own recipe and this is my. I don’t give a damn what your grandma said heffaa! Recipe: 8-10 medium bowl servings Preparing seasoning • 1 pk- 2oz bun bo hue season (any brand) • 1/4 cup cooking oil • 2 tablespoon minced garlic • 1/4 cup sliced shallots • 3 tablespoon minced lemongrass In a sauce pan add cooking oil, chopped lemongrass, garlic, shallots and bun bo hue seasoning package. Fry until fragrant and set aside. Broth: •1.5 gallon water •4-5 lbs beef back ribs (parboiled) •2 lbs beef brisket ( cut into 1/2 lbs pieces and parboiled ) •rare steak(thinly sliced) I’m using beef tri tips •2 tablespoon bun bo hue soup base any brand. (optional, you can use 1 tbs of shrimp paste) •2 tablespoon fish sauce( 3 crabs brand) •1 tablespoons msg ( optional)) •3 oz rock sugar (optional, 2 tablespoon white sugar) •8-10 pieces of lemon grass( cut into 3 inches, lightly smash) •2 tablespoon salt (more if needed) 1•In a big pot. Bring water to a full boiling 2•Add parboiled beef ribs, brisket, premade bun bo mixture and lemongrass stick. Covered and simmer for 1 hour. 3•Uncovered and remove the brisket. If you prefer brisket to be more tender. Simmer a little longer. Cover and simmer for another hour or until ribs are tender. 4•Add more salt, sugar, msg, bun bo soup base or shrimp sauce and fish sauce. 5•Mix well and let sugar completely dissolved. Taste and adjust. You can cook pork knuckle/feet and pork blood cubes on the side. Add it in when ready to eat. Looks spicy but it’s not very spicy. Followed the instruction on the box. •Make sure to bring water to a full boiling before adding in the sago(mini tapioca pearl). Continue to let it simmer until translucent (20-25 minute). Batter recipe: make 10-12 rolls •1 cup rice flour •1/2 cup cup tapioca starch •2 tablespoon potato starch •1 teaspoons salt •4 cup water •1 tablespoons cooking oil (vegetable) Please do not try to substitute any of the ingredients Mix well until smooth and let batter set for 30 minutes. 1•Bring steamer to a full boiling. Brush nonstick pan with a little oil. Put pan in to preheat (1-2 minutes) 2•Give batter a stir before pouring. Pour just enough to cover the pan (not too thick). 3•Cover the steamer and steam until batter slightly bubbles (3-4 minutes) 4• Remove pan and let it cool off before starting to roll (2-3 minutes). 5•Roll half way, add shrimp and roll the rest of the way. It’s better to work with 2 pan. While the first one is cooling and waiting to be roll. You can start on the second one. I got these small sheets from Walmart or online (Mainstay’s nonstick cookie banking sheet 13.2”X9.2”). Works perfectly for one rolls. These rolls are a little bigger than the normal rolls at dim sum. Sweet soy sauce: •6 tablespoons LIGHT soy sauce •3 tablespoons water •3 tablespoons brown sugar Heat until sugar dissolved. Taste and adjust Shrimp filling: Peeled and deveined shrimp. Lightly added salt, pepper, and cornstarch. Place on a plate. Steam on high for 4-6 minutes or until cooked. Depending on how big the shrimps are. Practice makes perfect. Mango 🥭 Sago recipe…….Everyone has their own and this is mine. Not much of a measure. Just add until your ancestors whispers, “That’s enough hefffaa”. Scroll back to my previous reels for “how to make the perfect sago”. All ingredients are found at Island Pacific Supermarket, you can also find them at most Asian supermarkets . Recipe: •1 can coconut gel •1 can evaporate milk •6-10 ounce coconut cream or milk (more if preferred ) •1/2 can sweetened condensed milk (more if needed ) •1 cup cooked sago •Ripen mangoes 🥭 (as much as you like ) Best to refrigerate for a few hour or overnight to thicken. If you wanna serve it with ice, make sure to add enough condensed cream/milk. Taste and adjust . VIETNAMESE BEEF STEW/BÒ KHO Everyone has their own recipe and this is mine. #heffaaclub Recipe: 10-12 serving •12 cup water 💦 •(1 pk) 2oz bo kho seasoning (any brand) •3-4 lbs beef chuck roast (cut into cube) •2 lbs beef rough flank (cut) •2-3 beef tendons (cut) •3 lbs carrot 🥕 •4 tablespoon minced garlic •1/4 cup minced shallots •(8-10) 5” lemon grass, lightly smashed •1/4 cup cooking oil •1/2 tablespoon ground pepper •3 tablespoon fish sauce (3 crabs 🦀) •2 tablespoon salt •1 tablespoon msg •1.5 oz rock sugar •1/2 cup ketchup Marinate the chuck roast, flank and tendons with bo kho seasoning, ground pepper, 1 tablespoon of salt, 1 tablespoon msg, 2 tablespoon of fish sauce, 2 tablespoons cooking oil, 2 tablespoon garlic and half of the shallots. Mix well with hand and marinate for 5/6 hrs. or overnight. 1•In a pot add 1 tablespoons oil and the rest of the garlic and shallots. Fry until fragrant 2•Add in the marinate meat. Sauté for 15-20 minutes. 3•Add in the water. Cover and bring to a full boil. 4•Removed all the scrums on top. Add lemongrass and ketchup. Cover and reduce heat to low and simmer for about 2 hrs. 5•Add carrot, rock sugar, the rest of the salt and fish sauce. Continue to simmer for another 30 minutes or until carrot are tender. 6•Add more water if needed. Bring back to a boil. 7•Taste and adjust. Served with noodle or baguette 🥖. Recipe for sauce: •1 tablespoons finely chopped of garlic •2 tablespoon finely chopped red onion •1 tablespoon finely chopped cilantro (leaves only) •1/4 cup finely chopped fresh parsley (leaves only) •1/2 tablespoons dried crushed chili 🌶 flakes •1/2 teaspoon ground pepper or black pepper •1 teaspoons dried oregano •1/2 teaspoon salt (more if prefer) •1/4 cup olive oil •1 tablespoon red wine vinegar •1 teaspoon fresh lemon 🍋 juice. *Mix well, taste and adjust. Let set for 15-20 minutes before serving. Refrigerate if not use right away. Sauce is good up to 3 days. Make just enough. Always best when it’s fresh. *You can put all the ingredients in a chopper and do it at the same time. I prefer hand chopped because it gives better texture. Remember no stem from parsley or cilantro.
