These are packed with fiber, vitamin C, and ready in 30 minutes with just 4 simple ingredients. Recipe (Serves 2–3) Ingredients: • 1 cabbage, sliced into 1-inch-thick “steaks” • 1/3 cup pizza or marinara sauce • 1/2 cup part-skim shredded mozzarella • Pizza toppings of your choice (e.g., veggies, lean protein) Instructions: 1. Preheat oven to 400°F (200°C). 2. Place cabbage steaks on a parchment-lined baking sheet. Bake for 25–30 minutes, until the cabbage is tender and the edges are slightly browned. 3. Spoon the cottage cheese mixture in a single layer over the zucchini. Add a little bit more marinara, remaining mozzarella, and breadcrumbs over the top.
