THE PERFECT ROAST CHICKEN 🍗🔥 all you need is👇 - 1 whole chicken (3-4 pounds) - extra virgin olive oil to coat chicken - any type of chicken seasoning (I’m using rotisserie chicken seasoning & lemon pepper) Preheat the oven to 400°F. Lay the chicken flat, breast side down, in a large lined rimmed baking tray. Using kitchen scissors, remove the backbone of the chicken, remove anything inside and separate the legs and thighs from the breast meat so they lay flat. Dry the chicken with paper towels, coat in oil and generously season with rotisserie chicken seasoning and lemon pepper. (Or any seasonings of choice!) Flip the entire chicken and press down on the center of the breastbone to flatten it further. Tuck the wings and repeat the last step. Cover with foil and roast for 1 hour and 30 minutes. Remove the foil, baste the chicken with its pan juices, and return to the oven for an additional 25 minutes. Broil for 2-3 minutes until the skin is golden and crispy.
