Cilantro lime + chicken creamy chipotle bowl Cilantro lime marinade: Ingredients: (mix in a bowl) • 1/4 cup of chopped cilantro (extra for garnish) • 4 garlic cloves minced • 1.5 tsp of chili powder • 1 tsp of cumin powder • 3 tbs of fresh lemon juice • 1 tbs olive oil • 1/2 tsp salt • 1/2 tsp of black pepper • 1.5 tbs of honey Mix marinade with chicken and let it marinate for 30-40min while prepping other ingredients Chipotle creamy sauce: • 1/4 cup of plain Greek yogurt • 1/3 cup of mayo • 1 chipotle pepper spoon full from a can of “chipotle in adobo sauce” (can add a little bit more for spice) • 1-2 garlic cloves • 1 tsp of lemon juice • 1 tsp of olive oil • 1 tsp of honey • sprinkle of salt & black pepper (Blend in food processor or blender if you don’t have one) Rice was prepped in rice cooker.. Toppings: • spring mix • tomato • corn • red onions
Never Give Up🤍 Some of you been here from the beginning and some of you are just now seeing the outcome. My journey wasn’t just a straight pathway, there were many bumps and turns on the way. I used believe that I needed to have everything figured out, that I was never enough, that I couldn’t be in the position I am today because of where I came from. I battled depression and anxiety, even till this day I deal with anxiety. There was a time I was in a dark place in the beginning of my career of social media, as I was growing I felt all the trauma creeping up on me. I’ve always been VERY grateful for my accomplishments along the way, but I always felt like something was missing, I didn’t feel whole. I lacked self love, I needed to work on myself, and grow + heal. I found God about 3 years ago on this random day that I had no idea would change my life, and I sought the lord. Through all the darkness I walked through I knew there was light somewhere waiting to shine. The little faith I had gave me the strength to keep going, to not give up on myself. Nov 20th I got baptized for the very first time, I waited until the moment I became ready and I felt a deep sense of joy and closeness to God like never before. I can’t talk to you about my whole journey through this caption, but I can remind you that even though it’s really hard, even though you’re tired, keep going!! All the struggles you overcome shapes you into the person you want to become. It’s a part of the process, and it is possible if you believe that you can overcome, achieve, and succeed the small wins and the big ones along the way.
